ECED& 107 - Health, Safety, and Nutrition

Previously ECED 204.
Introduction to the implementation of equitable and anti-racist health, safety, and nutritional practices for families and children (prenatal through age 8 years). Review of federal, state and program policies and requirements in the areas of nutrition, illness, and safety in early learning programs. Recognize signs of child maltreatment (abuse and neglect) and review reporting requirements as a mandated reporter. Overview of developmentally, culturally, and linguistically responsive strategies and materials to promote wellness and healthy development including inequities in access to health, safety and nutrition resources. Either ECED 204 or ECED& 107 may be taken for credit, but not both.

Course Outcomes
  • Describe federal, state and program health, safety, and nutrition policies and practices in early care and education settings.

  • Describe the requirements of being a mandated reporter. 
  • Identify ways to prevent illnesses and infectious disease within family and cultural contexts.
  • Examine safety and emergency policies that support children’s developmental, cultural, and linguistic needs.
  • Describe the nutritional needs of children and how they are shaped by factors including culture, religious practices, abilities, health, and availability of nutritional resources.
  • Identify culturally and linguistically responsive materials and community resources to promote wellness and healthy development.
  • Develop strategies for providing support and addressing inequities in family access to health, safety, and nutrition resources.
